These beautiful truffles team the lovely flavours of roasted almonds and deep chocolate to produce a decadent flavour without the addition of unhealthy refined sugar, gluten or dairy. Richer in taste than a bliss ball these truffles are the perfect for an after dinner treat or go well with a cuppa for morning or afternoon tea. These are a winner with both of my kids too, and a great little nutrient dense cooking project for the school holidays!
Quick and easy to make, these truffles contain a real hit of roasted almonds, which give a depth of flavour. Almonds are such a wonderful food for snack time as they have an impressive nutrient profile, including fibre, protein, good monounsaturated fats and magnesium. They are also loaded with antioxidants, which protect our bodies from oxidative damage and therefore protect us from the affects of ageing and disease. Almonds are also a high source of Vitamin E, which protect our cells against damage, with people who eat higher amounts of foods containing Vitamin E being less likely to suffer from cardiovascular disease or cancer. Consuming almonds also positively influence blood sugar control and blood pressure levels, due to the relatively high magnesium levels found in them. Eating 1-2 handfuls of almonds daily has also been found to positively influence levels of harmful LDL cholesterol in the body. Feel like grabbing some almonds yet?!?
Another fabulous ingredient in these truffles are chia, which gives them such a lovely chewy texture. Chia seeds are also loaded with antioxidants, which as well as protecting our cells from damage also protect the sensitive fats in the chia seeds from oxidative damage. Chia seeds are also packed with fibre, which fills us up and keeps us feeling satisfied, making these truffles ideal for filling little tummies (or ours) in between meals. Fibre also fuels our good bacteria in our guts, which is crucial for overall health. Chia seeds are also high in valuable protein, calcium, phosphorus, manganese and magnesium- all of which are essential for bone health. Chia is such a power packed food!
So to make the truffles:
- Heat your oven to 180 degrees, once heated place 3/4 cup of almonds on an oven tray and roast for 8-10 minutes
- Place 1 cup of dates (which give the lovely sweet taste) and 1 tbsp of chia seeds into a bowl and cover with boiling water, allow to soften for about 10 minutes
- Once cooled, place the roasted almonds into your high powered blender and blitz until fine
- Add the drained date and chia mix, throw in 2 tbsps raw cacao and 1 tbsp of tahini for extra creaminess and mix until smooth
- Roll the mixture into balls, dip your fingers into a bowl of water in between rolling as the mixture is very sticky!
- Place in the fridge for about 2 hours or until firm
- Devour and enjoy!
