A gluten free, low carb, grain free, delicious, healthy, real food pizza recipe? Yep, I have found it. Fathead pizza is famous in the low carb world and it turns out for good reason. Easy to whip up, it was demolished by my family and the best thing is you can all enjoy a wholesome nutritious meal packed with protein and fibre at the same time as eating pizza, without the heavy carbs of a takeaway pizza or the nasty preservatives of a ready made frozen pizza base from the supermarket. Ingredients (makes 2 pizzas)
1½ cups shredded mozzarella cheese
¾ cup almond flour
2 tablespoons cream cheese
1 teaspoon white wine vinegar
1 egg
½ teaspoon salt
olive oil to grease your hands
Toppings: what ever you like! I had goats cheese and olives, hubbie had the works (literally anything he could find in the fridge, kids had ham and cheese, but you could go all posh and have prawn and chorizo or lamb and red onion…)
Instructions
Preheat the oven to 200°C
Heat the mozzarella and cream cheese in a small pan on medium heat.
Stir until they melt together. Add the other ingredients and mix well.
Oil your hands and flatten the dough on parchment paper, about 20 cm in diameter. You can also use a rolling pin to flatten the dough, the mix is sticky though, be warned!
Make holes with a fork and bake in the oven for 10–12 minutes until golden brown and remove from the oven.

Once cooked, add your toppings.
Spread a thin layer of tomato sauce on the crust. Apply toppings and and bake for 10–15 minutes or until your cheese has melted.

Serve with a green salad.
Tip!
Bake an additional pizza crust. Spread a generous amount of garlic butter and bake for another minute and you’ll have the world’s best garlic focaccia!
