Are you looking for an alternative for hot soup now that Spring has arrived? Or are you looking for a delicious and different way to get those all important veggies and fibre into your diet? Then raw soups are what you have been looking for! Raw soups are a great way to add a fantastic variety of raw vegetables to your diet. They are simple to make with minimal clean-up and they are very easy to digest. Soups are basically a smoothie that is mostly (if not all) vegetables instead of fruit, with some extra zingers of flavour added in. It helps to have a high speed blender like a Thermomix or Vitamix to get a silky smooth consistency , but just about any blender will work if you make small enough batches. For a raw soup you need to have most of the ingredients to be water rich or you’ll end up with a thick sauce- beware! You can use the same base of simple ingredients for a variety of soup recipes, by adding different herbs and spices, vegetables, sea vegetables, or nuts and seeds to the base. Cucumbers, celery, tomatoes and bok choy are just a few of the water rich foods that make a good base for any raw soup.
Soups also package up and travel well so you can take them to work, on picnics or pack in a flask for hikes for a burst of flavour and freshness. In fact one of the great things about soups is that they are so easy to digest. If you’re an active person and don’t like the full feeling you have for hours after a meal then soups might just be the ticket for you. Because they are so easy for your system to digest you’re gleaning more of the available nutritional value from the food. Most of us don’t chew our food sufficiently to allow them to be digested fully. In essence you’re getting more nutrition for dollars spent. And if you happen to eat your evening meal within 3 hours of your bedtime soup should greatly enhance your sleeping experience because it should be out of your stomach before you hit the sheets.
In addition to all these healthy benefits, raw soups are very easy to make and can actually be a lot of fun as you create your own tasty recipes. One of my favorite things in the kitchen is using up what’s available and incorporating it into a wonderful meal, and this so easy to do when you’re making a raw soup.
So here is one of my favourite raw soup recipes, Beetroot Beauty Raw Soup. Beetroot is one of nature’s finest detoxifiers and for this reason I included this recipe in my Easy Spring Detox, available online to download now HERE Beetroot aids in liver detoxification, purifies the blood, reduces blood pressure, boosts stamina, is rich in Vitamin C and fibre and is full of powerful phytonutrients which give the wonderful purple colour.
Makes 2 servings
1 cup water
1 avocado
1 small beetroot
2 carrots, chopped
1⁄2 teaspoon ginger powder
1 teaspoon sea salt
1 tablespoon raw apple cider vinegar
3 tablespoons hemp seeds
1 tablespoon chopped parsley
Dash of cayenne pepper
Add water, avocado, beetroot, carrots, ginger powder, sea salt, and apple cider vinegar to a high-speed blender. Mix well.
Pour immediately into a bowl and top with hemp seeds, cayenne pepper, and parsley. Serve, enjoy and feel great about how many raw veggies you are getting into your diet!
