The first question that patients ask me when I request that they give gluten a break for the sake of their health is “But what bread am I going to eat?? Gluten free bread tastes awful!!” Well I agree, most commercially produced gluten free bread does taste awful (yes, supermarket brands I am talking to you), so I really want to share this fabulous recipe of the gluten free bread that my family eats on a daily basis- and its not awful but delicious! This bread is doughy, tasty, springy and free of any gluten, dairy, egg, nasties or preservatives, unlike commercial gluten free breads which tend to be a chemical cocktail. Packed full of superfood dynamos such as chia, quinoa and buckwheat it also packs a fantastic nutrient punch, which couldn’t be more different to the nutrient void of highly processed wheat based breads!
The reasons why I like my patients to give gluten a break for a while are many and varied, so many in fact I am going to leave in depth detail for a whole other post!!! But briefly this is why:-
- Celiac disease (an autoimmune reaction to the proteins in gluten) is on the rise and massively under diagnosed and very harmful to health
- Gluten sensitivity, or Non Celiac Gluten Sensitivity (yes it is real and does exist and isn’t a figment of the imagination) is even more common than celiac disease and can also have very harmful impacts on health, beyond just digestive symptoms.
- Gluten can cause adverse health affects even in those without Celiac or NCGS, such as digestive issues or the dreaded leaky gut (learn more about leaky gut and the wondrous healing qualities of chicken broth HERE)
- Many brain and mental health disorders such as anxiety and depression are exacerbated by the consumption of gluten
- Wheat in particular is highly addictive and can lead to carb overload, playing havoc with blood sugar, weight gain, mood swings, energy levels
- Gluten is associated with causing and exacerbating autoimmune diseases
